This tea is harvested 88 days after the beginning of spring on the Japanese calendar and aptly called “Hachiju-Hachiya,” meaning 88 nights. It is from the first harvest of the tea plant and therefore made with young, very tender buds. When infused with hot water, this tea manages a tasty balance of mellow sweetness and light, refreshing astringency. Brew with water of about 70 degrees celsius.
